Pizza dough is one of those things that just tastes better homemade. It’s also a bit of a flex to be able to whip up a delicious pizza out of a few basic pantry ingredients like this pizza with grapes and brie.

I have to credit Jamie Oliver for this recipe. I’ve been using his version which is very similar for years. My only change really is the recipe portion is halved, I feel it’s just a bit more manageable. And I use raw castor sugar for the sweetener.

Add a few drops of water and work into the dough. Keep adding until it has a nice bit of give in the dough.

Can I freeze unused pizza dough?

Yes! I like to roll it into a disc shape about 15cm thick and place baking paper layers between each disc. Place in an airtight container for up to 3 months.

How do I defrost pizza dough?

Place in the fridge for 8 hours, then out on the bench for 30 minutes to come to room temperature.

How do I cook pizza dough?

To cook the pizza, turn the oven up to full whack. Add your dough to baking paper or a pizza stone, add your toppings and bake for about 10 minutes until the base is crispy and the toppings are cooked.

How to make it - step by step!

1. Activate yeast

Add warm water to a jar, add the yeast, oil and sugar, stir to combine. Let it sit for 3-4 minutes to activate the yeast.

Mix the flour and salt together in a large bowl.

3. Combine wet and dry ingredients

Make a well in the centre, and pour in the liquid. Stir until the dough comes together, turn out onto a work surface and knead for a couple of minutes until the dough becomes smooth.

4. Rise

Dust the bowl with flour and add the dough back in, cover with a damp cloth and let it sit in a warm place for about 1 hour, until the dough has doubled in size.

5. Knock back the dough

Tip the dough out onto a lightly floured surface and ‘knock back’ the dough by kneading it to push the air out.

Divide the dough into 4 even pieces. Use immediately, rolling into pizza bases or refrigerate / freeze for later use.
