Zesty, smokey, buttery, grilled corn flavoured with tajin, smoked paprika, garlic, onion, and coriander, served with chipotle mayo and lime is the perfect summer side - yes please.
- 6 whole corn on the cob (husk and silk removed)
- ¼ cup coriander, finely chopped
Instructions
- Heat grill/broiler to high, place corn on a tray and grill on all sides until slightly charred, keep an eye it doesn’t blacken too much!
- You can also do this on a gas hob flame or BBQ, place corn on a wrack over a flame, then turn regularly until charred all over
- Meanwhile, in a small bowl, mix together mayonnaise and chipotle
- Melt butter, add garlic powder, onion powder and smoked paprika
- Brush melted butter mixture over corn, then sprinkle over tajin and coriander
- Serve with chipotle mayonnaise
