Purple Cabbage Slaw (Crunchy & Delicious)

Sweet with the perfect amount of tang. Vibrant, crunchy, fresh and full of colour with flavours of fresh dill and sweet carrot, this purple cabbage slaw is your 20 minute slaw recipe perfect for entertaining or meals at home.

Ingredients

5 cups red cabbage

3 large carrots

3 cups kale

1/2 cup fresh dill

1/4 cup mayonnaise

2 tbsp juiced orange

2 tbsp juiced lemon

1 tsp apple cider vinegar

2 tbsp olive oil

1/2 tbsp dijon mustard

1 tsp maple syrup

1/4 tsp salt

1/4 tsp pepper

Instructions

Shred your cabbage into thin slices using a mandolin or knife.
Peel with a julienne peeler or grate your carrots into thin strips.
Slice kale into thin strips (removing the stem).
Add the ingredients to a big salad bowl with most of the dill. Reserve some dill and a couple of strands of carrot for styling.
Add dressing ingredients to a jar with a lid, shake to emulsify.
Pour the dressing over the salad.
Toss to combine, if serving in that bowl give the sides a little wipe to clean it up.
Add the remaining pieces of carrot and dill for a styling garnish.
