Imagine that a cinnamon roll and your favourite granola had a baby. If you’re level 10 obsessed with cinnamon rolls (like me), you'll agree making a cinnamon roll into breakfast form is the greatest idea I’ve had in a while.
Making your own granola might seem like a lot of effort or even difficult, but it’s actually so simple and so rewarding! Plus your kitchen smells like a bakery. You don’t need any special equipment to make this recipe. I like to use melted butter instead of oil for this recipe because the butter flavour makes it taste so much more like a baked cinnamon roll.
It’s incredibly easy and insanely moreish. I love to serve this over some yoghurt, or just grab a little handful when I’m feeling snacky. You could serve it with stewed apples or over ice cream - yum! The possibilities are endless. This is also a really lovely handmade gift. You can make up a couple of batches and put them in little jars for Christmas gifts. I mean, you don’t really know if someone loves you until they surprise you with a jar of homemade cinnamon roll granola, am I right?
I make this recipe two ways. The white choc drizzle version is just so luxe and tastes just like proper cinnamon roll frosting. But like a cinnamon roll, it’s only eaten on occasion (sort of). So, I also do a version where I leave off the white choc so that I can eat it daily (hourly). It’s still so delish and totally gives cinnamon roll. Store it in the fridge in an airtight container for optimum freshness and awesomeness.

Use coconut oil instead of butter and opt for dairy free white chocolate
Use whatever nuts are your fave. You can also use oats in this recipe as well. Just stick to 4 cups of dry ingredients. You can also sub honey for maple.

How to make it - step by step!
Preheat your oven to 150 c 300 f. Roughly chop the larger nuts leaving some whole.
To a mixing bowl, add nuts and seeds, maple, butter, almond butter, cinnamon, salt and ½ tbsp vanilla. Mix to combine.
Pour onto a lined baking tray and bake for 25-30 minutes, stirring at the halfway point, until golden brown. Remove from the oven and let sit for minutes to cool.
Meanwhile, melt white chocolate using a double boiler or microwave. Drizzle over white chocolate, place the tray in the fridge to set for 30 minutes. Then transfer to an airtight container and store in the fridge.

- 1 cup cashews
- 1 cup pecans
- 1 cup almonds
- ½ cup hazelnuts
- ½ cup pistachios
- ½ cup pumpkin seeds
- ¼ cup almond butter (or nut butter of choice)
- ¼ cup salted butter, melted
- ¼ cup maple syrup
- 1 tbsp ground cinnamon
- ½ tsp salt
- 1 tbsp vanilla extract
- 100g white chocolate
- Preheat your oven to 150 c 300 f. Roughly chop the larger nuts leaving some whole
